Coffee will start to break down and change when stored in a serving carafe. Coffee is ruined with the addition of heat after it is brewed – so cafe’s that use burners or heaters to keep brewed coffee hot for their customers, are destroying the flavour of that coffee. One factor is the pH of coffee. Coffee that is first brewed to a pH of lets say 5.0 to 5.4, will drop to 4.6 in as little as 2 hours – contributing to bitterness or sourness.

expressia™ brew time is the shortest possible. Most coffee shop coffee is drip brewed for about 4 minutes. By comparison, most espressos achieve premium flavour profiles in about half a minute – any longer and the “sweetness” wil be lost and bitterness will start to set in. expressia™ achieves the best flavour profile of the coffee in 25 to 45 seconds – fully extracting the most volatile and sweetest elements while stopping short of the more astringent compounds being brewed into the cup. The grounds are much finer than for regular coffee so all the flavours can be extracted evenly and quickly.

There is no paper filter – the pressure of the brew process forces all brewed elements into the cup. Drip brew systems leave the crema and the lighter compounds trapped in the filter or sitting in the top of the grounds. expressia™ has rich “mouth-feel” without being bitter.

expressia™ is brewed straight into the cup so that every possible fraction of the flavour profile gets to the customer. Roasted coffee contains from 700 to 850 flavor constituents.

expressia™ customers can choose their favorite roast of coffee. With a drip brew the best they can usually hope for is the coffee of the day or if they are lucky, a choice of light, medium or dark. With expressia™ they can have whichever roast they prefer – even espresso.
